Sample Menu – Week One
MONDAY
Meal 1 - Wheat free, gluten free muffin, topped w/ non
dairy cream cheese accompanied by scrambled egg-
whites topped with salsa
Meal 2 - Scrumptious chili made with fresh turkey
Meal 3 - Ocean caught grouper topped with a delicious yellow tomato
sauce swimming on a sea of blanched
julienne vegetables
Meal 4 - Chicken heart-of-palm salad served over field greens with a
side of diet house dressing
Meal 5 - London broil - Marinated tender cuts of antibiotic and
hormone free Black Angus beef topped with a
dash of homemade gravy served over roasted garlic-smashed cauliflower and
red potato medley
TUESDAY
Meal 1 - Delicious egg white omelet with sautéed shallots, mushrooms
and sun-dried tomato
Meal 2 - Delicious Oriental chicken noodle soup
Meal 3 - Our own chicken chopped steak topped with peppers and onions
nesting over baby carrot ratatouille
Meal 4 - Fresh turkey breast salad with celery, apples, fresh basil and
bathed in silken tofu “Marionaise”,
accompanied by a side of creamy Italian dressing
Meal 5 - Eggplant Rolatini made with non-dairy cheese and pasta
topped with Mario’s famous tomato sauce
WEDNESDAY
Meal 1 - Lo Cal apple pie pancakes made with oatmeal flour with a
side of diet apple butter
Meal 2 - Yellow split pea soup with smoked poultry
Meal 3 - Veal Pepperoni Stew - Tender veal, gluten free turkey
pepperoni roasted peppers, sweet onions, potato,
peas and carrots
Meal 4 - Seasonal vegetables accompanied by delicious hi-protein dip
Meal 5 - Pez Cozumel - Fresh tilapia filet topped with tomatillo
sauce, roasted garlic and baby shrimp served over
brown organic rice
THURSDAY
Meal 1 - Sicilian Omelet - Egg whites, fresh basil, caramelized
onions and veggie mozzarella cheese
Meal 2 - Beef and shitake mushroom barley soup
Meal 3 - Chicken stuffed zucchini, served with brown rice penne pasta
in a delicious pink sauce
Meal 4 - Southwestern poultry salad, served over mesculin greens with
a side of southwestern diet house dressing
Meal 5 - Lemon-pepper basa accompanied by swiss chard and rosemarie
potatoes
FRIDAY
Meal 1 - Oatmeal crusted egg white omelet with mushrooms, diced
tomato and grilled red onion
Meal 2 - Delicious and high protein white bean soup with edamame
Meal 3 - Crab cakes ala Mario served with baked potato chips and
horseradish slaw
Meal 4 - Chicken Fajita Salad: made with mixed lettuce, pico de gallo
and a side of guacamole…Ole!!!
Meal 5 - Tri color free-range turkey loaf, topped with mushroom
gravy, in the company of candied sweet potato
and sautéed endive greens
All you have to do
is eat.
